Mandarin Salad

Ingredients

  • 1/4 c. sliced almonds
  • 1/4 head lettuce
  • 1 c. chopped celery
  • 1 Tbsp. chopped parsley
  • 2 oranges cut in sections, or 1 can of mandarin oranges
  • 1 Tbsp. and one tsp. sugar
  • 1/4 bibb lettuce or spinach
  • green pepper
  • 2 green onions, sliced thin

Directions

    Place almonds and sugar in a small saucepan.

    Stir constantly over low heat until sugar melts and coats nuts.

    Place lettuce, spinach, celery, green pepper, parsley and onions in a plastic bag and refrigerate.

    Put all the dressing ingredients in jar and shake.

    To bag of greens, add dressing, oranges, and lastly add the almonds.
