  • 3 whole Mangoes, Peeled And Sliced
  • 5 whole Fresh Peppermint Leaves
  • 1 cup Water
  • 3 Tablespoons Lite Coconut Milk
  • 1 Tablespoon Lime Juice
  • 2 Tablespoons Sugar

Directions

    In a large food processor, combine mango slices and peppermint leaves.

    Process until a smooth puree is formed.

    Transfer to a large bowl and add water, coconut milk, lime juice and sugar.

    Transfer mixture into a 9x13 glass or metal baking dish.

    Place in the freezer for 3 hours.

    Each hour, whisk the mixture, making sure to incorporate the frozen edges.

    Prior to serving, mash with a fork and stir evenly.
