- 2 (6 oz.) cans tomato paste
- 1/2 c. chopped onions
- 1 (3 oz.) can sliced mushrooms, drained
- 2 Tbsp. snipped parsley
- 1/2 c. grated Parmesan cheese
- 3 manicotti shells
- 2 tsp. oregano
- 1 1/2 tsp. salt
- 1 tsp. sugar
- 2 cloves garlic, minced
- 24 oz. (3 c.) Ricotta or cottage cheese, drained
- 2 eggs, slightly beaten
- 1/4 c. snipped parsley
Directions

1In a large pan, brown meat and drain fat.

2Add water, tomato paste, onions, mushroom, 2 tablespoons parsley, oregano, salt, sugar and garlic.

3Simmer uncovered for 30 minutes, stirring occasionally.
