  • 1 lb. ground beef
  • 2 c. water
  • 2 (6 oz.) cans tomato paste
  • 1/2 c. chopped onions
  • 1 (3 oz.) can sliced mushrooms, drained
  • 2 Tbsp. snipped parsley
  • 1/2 c. grated Parmesan cheese
  • 3 manicotti shells
  • 2 tsp. oregano
  • 1 1/2 tsp. salt
  • 1 tsp. sugar
  • 2 cloves garlic, minced
  • 24 oz. (3 c.) Ricotta or cottage cheese, drained
  • 2 eggs, slightly beaten
  • 1/4 c. snipped parsley

Directions

    In a large pan, brown meat and drain fat.

    Add water, tomato paste, onions, mushroom, 2 tablespoons parsley, oregano, salt, sugar and garlic.

    Simmer uncovered for 30 minutes, stirring occasionally.
