- 2 lb. carrots
- 1 large or medium onion
- 1 large bell pepper
- 1 can tomato soup
- 1/3 c. oil
- 1/3 c. vinegar
- 1/3 c. sugar
Directions

1Peel, slice and cook carrots.

2Add salt, if desired.

3Peel onion and chop.

4Chop bell pepper.

5Mix soup, oil, vinegar and sugar together.

6Drain carrots and cool.

7Put all ingredients together and stir.

8Place in refrigerator; let stand overnight. Will keep in airtight container for 2 weeks.
