  • 4 large carrots (1 lb.)
  • 4 large parsnips (1 lb.)
  • 4 Tbsp. butter or oleo (1/2 stick)
  • brown sugar to taste
  • salt to taste

    Peel and slice carrots and

    to a boil together in about 1 inch of water. Reduce heat to low, cover and simmer for about 20 minutes

    to heat and mash in saucepan with potato
