Ingredients
- 1 1/2 lb. stew beef (1-inch pieces)
- 3/4 c. dry kidney beans
- 7 c. water
- 1 (16 oz.) can tomatoes
- 1/2 cabbage, cut
- 1 carrot, sliced
- 1 onion, sliced
- 1 clove garlic
- 1 Tbsp. salt
- 2 tsp. basil
- 1/4 tsp. pepper
- 1/3 c. elbow macaroni
Directions

1Wash kidney beans and place in Dutch oven.

2Add water; bring to boil.

3Cover and cook 2 minutes.

4Remove from heat.

5Let stand 1 hour.

6Drain tomatoes; add liquid to beans.

7Add meat, cabbage, carrot, onion, garlic, salt, pepper and basil to beans.

8Cover and simmer 1 1/2 hours.

9Cut reserved tomatoes into pieces.

10Add tomatoes and macaroni to soup and simmer 15 minutes.

11Serve with Parmesan cheese.
