Mexican-Beef Cabbage

- 2 Tbsp. oil
- 1 large onion, chopped
- 1 lb. ground beef
- 1 medium head cabbage, cut into 6 wedges
- 1 (16 oz.) can tomato sauce
- 1 tsp. garlic powder
- 1 tsp. pepper
- 1 c. Mozzarella cheese, grated
- chili powder (optional)
- 3 c. hot, cooked rice
Directions

1Put oil in large skillet over moderate heat.

2Add onion and saute until golden.

3Add meat, cooking until brown.

4Arrange cabbage over meat.

5Add tomato sauce, garlic powder and pepper. Stir to blend.

6Cover and simmer over low heat for 30 minutes or until cabbage is just crisp-tender.

7Sprinkle with cheese and heat until cheese melts.

8Serve over rice.
