Mexican-Beef Cabbage

  • 2 Tbsp. oil
  • 1 large onion, chopped
  • 1 lb. ground beef
  • 1 medium head cabbage, cut into 6 wedges
  • 1 (16 oz.) can tomato sauce
  • 1 tsp. garlic powder
  • 1 tsp. pepper
  • 1 c. Mozzarella cheese, grated
  • chili powder (optional)
  • 3 c. hot, cooked rice

Directions

    Put oil in large skillet over moderate heat.

    Add onion and saute until golden.

    Add meat, cooking until brown.

    Arrange cabbage over meat.

    Add tomato sauce, garlic powder and pepper. Stir to blend.

    Cover and simmer over low heat for 30 minutes or until cabbage is just crisp-tender.

    Sprinkle with cheese and heat until cheese melts.

    Serve over rice.
