  • 1 1/2 c. self-rising corn meal
  • 3 eggs, beaten
  • 1 c. creamed corn
  • 1 c. buttermilk
  • 2/3 c. oil
  • 1 tsp. salt
  • 3 jalapeno peppers, seeded and chopped
  • 1 1/2 c. grated sharp cheese
  • 1 (4 oz.) can taco sauce

Directions

    Mix all ingredients except cheese.

    Pour half of mixture into greased 10-inch square container.

    Spread half of cheese on top. Spread remaining mixture on top, ending with remaining cheese. Bake at 350° for 45 to 60 minutes or until done.

    Yields 10 to 12 servings.
