  • 1 1/2 c. cornmeal (self-rising)
  • 1/4 c. flour
  • 1 tsp. sugar
  • 1 c. buttermilk
  • 3 eggs
  • 1 chopped bell pepper
  • 1 Tbsp. hot pepper
  • 1 can creamed corn
  • 2/3 c. oil
  • 1 c. shredded Cheddar cheese

Directions

    Mix everything well, but cheese.

    Pour 1/2 into greased pan. Cover with shredded cheese.

    Pour remainder of batter over cheese. Bake at 350° for 45 minutes.
