  • 1 1/2 c. self-rising cornmeal
  • 1 tsp. baking powder
  • 1/2 medium onion, chopped
  • 1/2 bell pepper, chopped
  • 1 jalapeno pepper, chopped
  • 1 can cream-style corn
  • 1 c. sour cream
  • 1/2 c. vegetable oil
  • 2 eggs
  • 1/2 c. grated sharp Cheddar

    Combine all ingredients.

    Put a little oil in the bottom of a large iron skillet and heat on stove eye just a minute.

    Sprinkle bottom of skillet with a little cornmeal.

    Pour mixture into skillet and bake in preheated oven 35 to 40 minutes at 350° to 400°.
