- 1 1/2 c. self-rising cornmeal
- 1 tsp. baking powder
- 1/2 medium onion, chopped
- 1/2 bell pepper, chopped
- 1 jalapeno pepper, chopped
- 1 can cream-style corn
- 1 c. sour cream
- 1/2 c. vegetable oil
- 2 eggs
- 1/2 c. grated sharp Cheddar
Directions

1Combine all ingredients.

2Put a little oil in the bottom of a large iron skillet and heat on stove eye just a minute.

3Sprinkle bottom of skillet with a little cornmeal.

4Pour mixture into skillet and bake in preheated oven 35 to 40 minutes at 350° to 400°.
