- 1 c. raw rice
- 1/4 c. oil
- 1 Tbsp. chili powder
- 2 c. water
- 1 tsp. salt
Directions

1Fry the rice in oil in a large skillet (cast-iron, if available) until medium brown; frequent stirring will be necessary. Cool somewhat.

2Add water, chili and salt.

3Cover and simmer 20 to 25 minutes until rice absorbs water.

4Serve hot.

5May be refrigerated and reheated.
