Ingredients

  • 2 to 3 lb. chicken
  • 2 Tbsp. butter
  • 2 Tbsp. oil
  • 1 large onion
  • 1 large green pepper, chopped
  • 1 large red pepper, chopped
  • 3 tsp. chili powder
  • 1/4 c. flour
  • 1 (2 lb.) can Italian tomatoes
  • 3 tsp. salt
  • 1 tsp. sugar
  • 1/4 tsp. pepper

    Brown chicken in butter and oil.

    Remove from pan.

    Stir onion and green pepper in pan.

    Saute until soft.

    Add chili powder and cook 1 minute.

    Sprinkle flour over top; blend in.

    Add tomatoes, salt, sugar and pepper.

    Cook, stirring constantly, until sauce thickens and boils 1 minute.

    Cover and bake 1 hour at 350°; uncover and bake 30 minutes longer.
