- 2 to 3 lb. chicken
- 2 Tbsp. butter
- 2 Tbsp. oil
- 1 large onion
- 1 large green pepper, chopped
- 1 large red pepper, chopped
- 3 tsp. chili powder
- 1/4 c. flour
- 1 (2 lb.) can Italian tomatoes
- 3 tsp. salt
- 1 tsp. sugar
- 1/4 tsp. pepper
Directions

1Brown chicken in butter and oil.

2Remove from pan.

3Stir onion and green pepper in pan.

4Saute until soft.

5Add chili powder and cook 1 minute.

6Sprinkle flour over top; blend in.

7Add tomatoes, salt, sugar and pepper.

8Cook, stirring constantly, until sauce thickens and boils 1 minute.

9Cover and bake 1 hour at 350°; uncover and bake 30 minutes longer.
