Mini Egg & Bacon Pies

- 12 eggs
- 1/2 cup cream
- 1/2 cup milk
- 1/2 cup parmesan cheese, finely shredded
- 4 slices bacon, chopped finely
- 5 sheets puff pastry
- salt
- pepper
- 2 tomatoes, sliced thinly (optional)
Directions

1Whisk together eggs, milk, cream, parmesan, salt, and pepper.

2Cut 5 rounds out of each sheet of pastry, and use the rounds to line the holes of 2x12 large cup muffin pan.

3Divide the chopped bacon between the pastry rounds.

4Pour egg mixture over bacon, to almost at the top of the pastry.

5Top each pie with a slice of tomato.

6Bake for 20 minutes at 200°C.
