- 2 cups split peas
- 3 quarts water or 3 quarts chicken broth
- 4 medium carrots, diced
- 3 celery ribs, diced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 2 bay leaves
- salt & freshly ground black pepper
Directions

1Combine peas and water in a large pot, bring to a boil, reduce heat and simmer 30 minutes.

2Add remaining ingredients and simmer 2-3 hours or until peas are soft and the soup thickens.
