  • 1 medium Irish potato
  • 2 Tbsp. margarine
  • 1 box powdered sugar
  • 1 lb. coconut
  • 1/2 block paraffin
  • 12 oz. pkg. chocolate chips

Directions

    Boil potato.

    Drain water well and add margarine; mash well. While still hot, add powdered sugar.

    Mix well and add coconut. Shape into balls (works better if you wet your hands frequently). Place on cookie sheet.

    Freeze.

    In double boiler melt paraffin and chocolate chips.

    Dip balls in chocolate and place on waxed paper to cool.
