- 1 c. whole wheat flour
- 3 Tbsp. brown sugar
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- dash of salt
- 1 beaten egg
- 1/2 c. milk
- 2 bananas, mashed
- 1/4 c. cooking oil
- 1/2 c. raisins
- 1/2 c. coconut (optional)
Directions

1Combine flour, sugar, baking soda and salt in large bowl. Stir in egg, milk, banana and oil; mix well.

2Add oats, raisins and coconut; stir to blend.

3Line muffin tins with paper liners. Fill 2/3 full.

4Bake at 375° for 20 to 25 minutes.

5Makes 1 dozen muffins.
