Ingredients
- 6 large mushrooms, sliced
- 1 large leek, thinly sliced
- 3 Tbsp. butter
- 1 Tbsp. oil
- 1 Tbsp. flour
- 6 oz. Swiss cheese, shredded
- 2 Tbsp. parsley, minced
- 4 large eggs
- 1 1/3 c. half and half
- 1 tsp. salt
- freshly ground pepper
- 1 tsp. dried oregano
- prebaked pie shell
Directions

1Heat butter and oil; saute leeks over high heat until soft. Stir in flour.

2Remove from heat and add mushrooms.

3Mix the eggs and add the half and half; mix.

4Blend in the leek mixture, cheese and salt and pepper.

5Pour the mixture into a prebaked pastry shell, filling to 1/8-inch from top.

6Sprinkle top with the oregano and parsley.

7Bake for 40 minutes.

8Let stand for 15 minutes before serving.
