Mushroom Quiche

- 1 (9-inch) deep pie shell
- 4 eggs, beaten
- 1/2 lb. fresh mushrooms
- 1/4 c. sliced green onions
- 1 Tbsp. butter
- 1 c. shredded Swiss cheese
- 1 c. milk
- 1/4 c. Parmesan cheese
- 1/8 tsp. pepper
Directions

1Brush inside of pie shell with small amount of beaten eggs. Prick bottom

2and sides with fork. Saute mushrooms and onions in butter until mushrooms are lightly browned and onions tender (6 to 8 minutes). Stir together mushrooms, onions and Swiss cheese.

3Put into pie shell. To the beaten eggs, add all remaining ingredients. Beat well and pour over mushroom mixture.

4Bake at 350° for 35 to 40 minutes.

5Let stand 10 minutes before cutting.
