Never Fail Rice Pudding

- 1 qt. milk
- 3 eggs
- 6 Tbsp. rice
- 3/4 c. sugar
- 3 Tbsp. margarine
- 1/2 c. shredded coconut
- coconut extract
Directions

1Cook rice, milk and margarine in top of double boiler, stirring occasionally for 1 hour. Stir eggs, sugar, extract and a dash of salt in buttered 2-quart casserole.

2Pour hot mixture into egg mixture and stir well.

3Place casserole in pan of hot water in oven.

4Stir coconut in after 15 minutes at 325°.

5Pudding is done when knife comes out clean.
