- 1 1/2 c. cooked brown rice
- 1 c. chopped tomato
- 1/3 c. frozen peas, thawed
- 1/3 c. frozen corn kernels, thawed
- 1/3 c. chopped green onion
- 1 Tbsp. lemon juice
- 1 Tbsp. apple cider vinegar
- 2 tsp. honey
- 1/8 tsp. white pepper (optional)
- 1 clove garlic, chopped
- 1/2 tsp. crushed dried oregano
- 1/2 tsp. crushed dried basil
Directions

1Combine rice, tomato, peas, corn and green onions in serving bowl.

2Beat together remaining ingredients for dressing and pour over rice, mixing well.

3Cover and chill for 15 minutes.
