Ingredients
- 1/2 lb. (2 c.) wild rice
- 1 c. pecan halves
- 1 c. golden raisins (optional)
- grated rind of 1 orange
- 1/4 c. chopped fresh mint
- 4 green onions, thinly sliced
- 1/4 c. olive oil
- 1/3 c. fresh orange juice
- 1 1/2 tsp. salt
- freshly ground pepper to taste
Directions

1Place rice in strainer and rinse in cold water.

2Put rice in heavy saucepan.

3Add 5 1/2 cups chicken stock.

4Bring to rapid boil.

5Reduce to simmer and cook uncovered for 45 minutes (check in 30 minutes to make sure it isn't getting too soft).

6Put thin towel in colander.

7Drain rice and place in bowl.

8Add rest of ingredients.

9Needs to stand 2 hours to develop.

10Serve at room temperature.
