Ingredients
- 1 medium onion, chopped
- 1 cup medium pearl barley
- 1/2 cup slivered almonds or 1/2 cup chopped almonds
- 1/4 cup margarine or 1/4 cup butter
- 3 teaspoons dried parsley flakes
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 (14 1/2 ounce) cans beef broth
Directions

1In a skillet, over medium heat, saute the barley, onion and almonds in the butter until lightly browned.

2Transfer to a 2 quart baking dish, I used a glass dish.

3Add the parsley, pepper and salt, stir to mix.

4Add the broth, stir to mix.

5Bake in the oven at 350 for 1 hour and 15 minutes, until the barley is tender and the liquid is absorbed.
