  • 1 1/4 c. (2 1/2 sticks) margarine, softened
  • 3/4 c. firmly packed light brown sugar
  • 1/2 c. granulated sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/2 c. self-rising flour
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 3 c. Quaker oats (uncooked)
  • 1 to 1 1/2 c. raisins (optional)

    Beat margarine and sugars until creamy.

    Beat in egg and vanilla.

    Add combined flour and spices; mix well.

    Slowly add oats, then raisins.

    Drop by spoonful on ungreased cookie sheet. Bake at 375° for a chewy cookie, 8 to 9 minutes; for a crisp cookie, 10 to 11 minutes.
