- 1 pound okra frozen or fresh
- 2 tablespoons cooking oil
- 1 diced onion medium
- 6 garlic cloves Minced
- 3 canned tomatoes or mediums diced fresh
- 6 ounces tomato paste or sauce
- 2 cups water
- salt
- black pepper
Directions

1Saute onions in oil

2Add garlic and saute some more until garlic turns golden color

3Add the okra. Saute until it is soft, this takes few minutes if the okra is frozen and may take longer if it is fresh. Some people deep fry the fresh okra before cooking it.

4Add fresh tomatoes and stir around for few minutes

5Add tomato sauce/paste and add water if needed

6Add salt and black pepper

7Boil at first then lower the heat and let simmer until the tomatoes and the okra are cooked. This might take around 35-45 minutes

8Serve hot with rice on the side
