Orange Glazed Yams

- 3 large yams
- 3 medium oranges
- 2 Tbsp. butter or margarine
- 1 Tbsp. grated orange peel
- 3/4 c. dark corn syrup
- 1/4 tsp. salt
Directions

1Cook yams in salted water until fork-tender. Cool.

2Peel and cut off ends.

3Cut each yam crosswise into 4 slices.

4Place in a shallow casserole.

5Peel oranges and slice each crosswise into 4 slices.

6Place on top of yams.

7Heat butter, orange peel, corn syrup and salt.

8Pour over yams and oranges. Bake in a 325° oven about 40 minutes, basting twice.

9Makes 6 servings.
