- 1 egg
- 1 c. milk
- 1 Tbsp. cooking oil
- 1 1/4 c. all-purpose flour
- 2 Tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- cooking oil
- syrup or fresh fruit
Directions

1Break egg into a 1-quart jar with lid.

2Stir with scraper.

3Add milk and 1 tablespoon of oil.

4Screw lid on tightly.

5Shake to mix well.

6Measure flour, sugar, baking powder and salt into jar. Close lid tightly.

7Shake to mix well.

8Batter should have some lumps.

9Turn burner on medium heat; rub a little cooking oil on griddle with a paper towel.

10Heat griddle.

11Measure 1/4 cup batter for each pancake.

12When bubbles cover surface of pancake and edges look dry, turn over.

13Cook until golden brown.

14Makes 7 or 8 pancakes.

15Serve with syrup or fresh fruit.
