Ingredients
- 2 qt. water
- 2 c. green split peas
- 1 stalk celery, washed and chopped
- 1 large carrot, peeled and chopped
- 1 small onion, chopped
- 1/4 tsp. ground dried thyme
- 1 bay leaf
- dash of cayenne
- salt and pepper to taste
Directions

1In a large pot, combine all ingredients and boil hard for 20 minutes.

2Reduce heat and simmer 45 minutes longer or until peas are tender.

3Strain soup through a fine sieve and reheat.

4Taste for seasoning.

5Add salt and pepper as needed.

6Serve hot with warm bread, if desired.
