Pecan Smithfield Chicken

  • 4 bones and skinned chicken breasts
  • chopped pecans
  • country ham
  • flour
  • 2 Tbsp. butter
  • 1 beaten egg
  • 1 c. dry bread crumbs

Directions

    With knife, slice a pocket in thickest side of each chicken breast.

    Fill each pocket with a slice of country ham and pecans which have been sauteed in butter.

    Dip each chicken breast in flour.
  4. 4
    Brush on beaten egg and dip into mixture of bread crumbs and pecans.
  5. 5
    Cook chicken in pan of oil 3 or 4 minutes on each side, then place in baking dish and finish cooking in a 350° oven for 30 minutes or until done.
