- 4 bones and skinned chicken breasts
- chopped pecans
- country ham
- flour
- 2 Tbsp. butter
- 1 beaten egg
- 1 c. dry bread crumbs
Directions

1With knife, slice a pocket in thickest side of each chicken breast.

2Fill each pocket with a slice of country ham and pecans which have been sauteed in butter.

3Dip each chicken breast in flour.

4Brush on beaten egg and dip into mixture of bread crumbs and pecans.

5Cook chicken in pan of oil 3 or 4 minutes on each side, then place in baking dish and finish cooking in a 350° oven for 30 minutes or until done.

6Serves 4.
