  • 4 lb. beets
  • 4 c. sugar
  • 2 c. vinegar
  • 2 Tbsp. salt

Directions

    Cook whole beets.

    When done, peel and slice.

    Set aside. Cook sugar, vinegar and salt over low heat until sugar dissolves. Pour syrup over beets and let stand overnight.

    Place in containers and freeze.

    Yields 2 quarts.
