Pickled Beets

  • 24 small beets
  • 1 pt. vinegar
  • 2 Tbsp. salt
  • 1 c. cooking liquid
  • 1 1/4 c. sugar
  • 2 Tbsp. pickling spice

Directions

    Cook beets, drain, peel and slice.

    (Reserve 1 cup liquid.) Combine liquid, vinegar, sugar and salt.

    Tie spice in a bag; add to liquid.

    Heat to boiling; add beets.

    Simmer 5 minutes. Remove spice bag.

    Continue cooking while packing 1 jar at a time. Fill to within 1/2 inch of top.

    Adjust lids.

    Process in boiling water for 10 minutes.

    Remove from canner and cool.

    Check seals before storing.
