- 24 small beets
- 1 pt. vinegar
- 2 Tbsp. salt
- 1 c. cooking liquid
- 1 1/4 c. sugar
- 2 Tbsp. pickling spice
Directions

1Cook beets, drain, peel and slice.

2(Reserve 1 cup liquid.) Combine liquid, vinegar, sugar and salt.

3Tie spice in a bag; add to liquid.

4Heat to boiling; add beets.

5Simmer 5 minutes. Remove spice bag.

6Continue cooking while packing 1 jar at a time. Fill to within 1/2 inch of top.

7Adjust lids.

8Process in boiling water for 10 minutes.

9Remove from canner and cool.
-
10Check seals before storing.

11Makes 4 pints.
