Pineapple Drop Cookies

  • 1 c. brown sugar
  • 1/2 c. shortening
  • 1/4 tsp. salt
  • 1 unbeaten egg
  • 1 tsp. vanilla
  • 2 c. flour
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 small can crushed pineapple, drained (reserve juice)
  • 1/2 c. nuts (optional)

Directions

    Cream sugar, shortening and salt.

    Beat in egg and vanilla; blend well.

    Stir in flour, baking powder and baking soda.

    Add in drained pineapple and nuts, if desired.

    Drop by teaspoonfuls onto lightly greased cookie sheet.

    Bake at 350° until very lightly browned.

    Frost with powdered sugar and pineapple juice while cookies are still warm.
