- 2 c. crushed canned pineapple
- 3 1/2 c. sugar
- 1/2 c. pectin
- 3/4 tsp. mint flavoring
- green food coloring to give desired tint
- juice of 1 lemon
- 2 tsp. grated lemon rind
Directions

1Mix fruit and sugar, stir well and bring to boiling point. Cook hard for 1 minute.

2Add coloring.

3Take from stove and add pectin.

4Skim well and allow to cool, stirring often.

5Add flavoring and put into jars.

6This is excellent served with roast lamb.
