Pineapple Mint Conserve

Ingredients

  • 2 c. crushed canned pineapple
  • 3 1/2 c. sugar
  • 1/2 c. pectin
  • 3/4 tsp. mint flavoring
  • green food coloring to give desired tint
  • juice of 1 lemon
  • 2 tsp. grated lemon rind

Directions

    Mix fruit and sugar, stir well and bring to boiling point. Cook hard for 1 minute.

    Add coloring.

    Take from stove and add pectin.

    Skim well and allow to cool, stirring often.

    Add flavoring and put into jars.

    This is excellent served with roast lamb.
