Pineapple 'N' Carrot Bread

Ingredients
- 3 1/3 c. all-purpose flour
- 1 1/2 c. rolled oats
- 5 tsp. baking powder
- 1 tsp. salt
- 1 (8 1/4 oz.) crushed pineapple
- 1 c. shredded carrots
- 3/4 c. salad oil
- 3/4 c. packed brown sugar
- 3 eggs
- 1/3 c. pineapple juice
- 1/2 c. chopped pecans
Directions

1Preheat oven to 350°.

2In large bowl, combine pineapple, carrot, salad oil and juice.

3Cover and process 30 seconds or until smooth.

4Add to ingredients in bowl mixing just until moistened.

5Fold in pecans.

6Grease only the bottom of a 9 x 5 x 3-inch baking pan.

7Spoon batter into pan.

8Bake 1 hour and 20 minutes or until a wooden pick inserted near center comes out clean.

9Let cool in pan 10 minutes.

10Remove from pan and cool completely on wire rack.
