Pineapple Nut Bread

Ingredients
- 2 c. flour
- 2/3 c. sugar
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 c. chopped pecans
- 1 beaten egg
- 1 tsp. vanilla
- 2 Tbsp. oil
- 1 small can crushed pineapple (undrained)
- 1 tsp. baking soda
Directions

1Mix together the flour, sugar, baking powder and salt.

2Add pecans.

3In small bowl, mix egg, vanilla and oil.

4Add to dry ingredients.

5In small bowl, add baking soda to pineapple; stir. (This will foam up making the liquid needed.)

6Blend into other ingredients and stir just to blend.

7Pour batter into an 8 x 4-inch loaf pan that has been sprayed with oil (or use shortening and flour method).

8Bake at 300° for 1 hour or until done in center.

9Serve warm or cold.

10Good with cream cheese spread. Serves 10.
