Pineapple Nut Bread

- 1 1/2 c. firmly packed brown sugar
- 1/2 c. shortening
- 2 eggs
- 4 c. sifted flour
- 2 tsp. baking soda
- 3/4 tsp. salt
- 1 (6 oz.) can frozen orange juice concentrate, thawed
- 1 (15 1/4 oz.) can crushed pineapple in its own juice
- 1 c. chopped walnuts
Directions

1Cream sugar and shortening until light and fluffy.

2Add eggs; beat well.

3Sift together flour, baking soda and salt. Alternately add dry ingredients and orange concentrate to creamed mixture; mix well after each addition.

4Stir in pineapple and nuts.

5Turn into 2 greased and floured 8 1/2 x 4 1/2-inch loaf pans.

6Bake at 350° for 50 to 60 minutes.

7Remove from pans.

8Cool on rack.

9Makes 2 loaves.
