- 16 ounces, weight Tater Tots
- 1/2 cups Pizza Sauce
- 1 clove Garlic, Minced
- 1 teaspoon Italian Seasoning
- 1/2 teaspoons Salt
- 1 pinch Cracked Black Pepper
- 1/2 whole Green Bell Pepper, Diced
- 4 whole Portabella Mushrooms, Cleaned, And Diced
- 2 whole Shallots, Diced
- 1/2 cups Pepperoni Slices, Chopped
- 2 cups Shredded Mozzarella And Provolone Cheese Mixture

1Start by baking the tater tots according to package instructions on a large rimmed sheet pan.

2However for this recipe we will remove them from the oven about 75% into the cooking process.

3Put the pizza sauce into a saucepan.

4Add the minced garlic into the pizza sauce, and bring to a simmer on the stove.

5Mix the Italian seasoning, salt, and pepper in a small bowl.

6Add the green pepper, mushrooms and shallots into a skillet, and cook for about 5 minutes on medium heat, just to sweat the vegetables.

7Check the tater tots.

8As soon as they start to get crispy, remove them from the oven and sprinkle on the Italian seasoning mixture.

9Shower the tots with the sliced pepperoni, and place back into the oven for about 4 minutes.

10Remove pan from the oven, then drizzle the pizza sauce over the top.

11Spoon the vegetable mixture over the tots.

12Top with cheese, and place back into the oven until the cheese just begins to get golden.

13Serve immediately.
