- 1 kg sulphur free dried apricot
- 1 cup sugar
- 2 vanilla beans, split
- 1 pinch salt
Directions

1Soak apricots in cold water for 1/2 hour or more.

2Transfer with soaking water to large pan.

3Add sugar, scrape seeds from vanilla beans.

4Add seeds and pod to the pan.

5Bring slowly to a simmer.

6Cook gently till very tender - about 40 minutes.
