- 1 small potato
- dash of salt
- 1 Tbsp. butter
- 1 lb. 10x sugar
- 1 tsp. vanilla
- 1/3 c. peanut butter
Directions

1Peel cooked potato.

2Mash with salt and butter.

3Add sugar, 1/3 at a time, beating until smooth and well blended.

4Mix in vanilla.

5If mix is not stiff enough to roll, add more sugar. Roll out between 2 sheets of wax paper until 1/8-inch thick; spread with peanut butter.

6Roll up like a jelly roll.

7Chill for one hour, then slice into 1/4-inch pieces.

8Let ripen a day before eating.
