Buttermilk Fudge

  • 1 c. buttermilk
  • 1 tsp. baking soda
  • 1 Tbsp. light corn syrup
  • 2 c. sugar
  • 1/4 c. butter or margarine
  • 1 c. chopped nuts

    Combine buttermilk and soda in heavy 3-quart saucepan.

    Let sit 20 minutes.

    Add sugar and corn syrup.

    Bring to a boil, stirring until sugar dissolves.

    When mixture boils, add butter and cook, stirring occasionally, until it reaches soft ball stage (236° to 238° on a candy thermometer).

    Remove from heat and allow to cool to lukewarm (110°), then beat until mixture loses its gloss and starts to thicken.

    Stir in nuts and turn into a buttered 8-inch square pan until firm.
