  • 8 medium potatoes, boiled, cooled and diced
  • 1/3 c. chopped onion
  • 1 c. grated Cheddar cheese
  • 1 can cream of celery soup
  • salt and pepper to taste
  • 1/2 c. butter
  • 8 oz. carton sour cream
  • 1 Tbsp. parsley

Directions

    Mix all ingredients except potatoes.

    Add potatoes and pour into a 2 1/2-quart buttered casserole dish.

    Top with bread crumbs.

    Bake at 350° for 1 hour uncovered.
