- 8 medium potatoes, boiled, cooled and diced
- 1/3 c. chopped onion
- 1 c. grated Cheddar cheese
- 1 can cream of celery soup
- salt and pepper to taste
- 1/2 c. butter
- 8 oz. carton sour cream
- 1 Tbsp. parsley
Directions

1Mix all ingredients except potatoes.

2Add potatoes and pour into a 2 1/2-quart buttered casserole dish.

3Top with bread crumbs.

4Bake at 350° for 1 hour uncovered.
