  • 6 large baking potatoes
  • 2 tsp. cooking oil
  • 1 tsp. chili powder
  • 2 to 3 dashes Tabasco
  • 2/3 c. bacon, chopped
  • 1 medium tomato, finely chopped
  • 2 tsp. green onion
  • 4 oz. (1 c.) shredded Cheddar cheese
  • 1/2 c. sour cream

Directions

    Clean and bake potatoes until done.

    Cool. Halve each potato lengthwise.

    Scoop out inside of each potato, leaving approximately 1/4-inch thick shell.

    Combine cooking oil, chili powder and Tabasco and brush on inside of potato halves.

    Then cut the potato halves in half again lengthwise; return to baking sheet.

    Sprinkle with bacon, tomato and green onion.

    Top with cheese.

    Bake in 450° oven for 10 to 12 minutes or until cheese melts.

    Serve with sour cream.
