- 2/3 c. butter or margarine
- 1 1/4 c. sugar
- juice and grated rind of 1 lemon
- 1/3 c. milk
- 2 1/4 c. sifted cake flour
- 1 1/4 tsp. salt
- 1 tsp. baking powder
- 5 eggs
Directions

1Cream shortening and sugar until light and fluffy.

2Beat 3 minutes at medium speed.

3Add lemon rind and juice; mix.

4Add milk and mix slightly.

5Add flour, salt and baking powder; beat 2 minutes.

6Add eggs, one at a time, beating 1 minute after each addition.

7Bake in tube pan at 300° for about 1 hour and 20 minutes.
