Pumpkin-Crusted Salmon

- 1/4 cups Raw (or Lightly Salted) Pumpkin Seeds
- 1 pound Skinned And Deboned Wild Caught Salmon
- 1/4 cups Pumpkin Butter
- 1/2 cups Italian Style Bread Crumbs
- 1/4 cups Grapeseed Oil
- Salt And Pepper
Directions

1Chop pumpkin seeds in a food processor until roughly chopped.

2Liberally salt and pepper each side of the salmon.

3Spoon the pumpkin butter onto both sides of each piece of salmon.

4Rub the pumpkin butter into the salmon and make sure each piece is thoroughly coated.

5Coat each piece with breadcrumbs (see note) and ground pumpkin seeds.

6In a large pan, heat grapeseed oil over medium/high heat.

7Cook salmon for about 3-4 minutes on each side or until thoroughly cooked (see note).

8Remove from heat and serve.

11Preheat oven to 400 F. Cook salmon on the stove top over high heat for about 1-2 minutes on each side.

12Place salmon in a greased baking dish, cover with a sheet of foil and bake for 10-15 minutes or until cooked all the way through.
