  • 1 leek
  • 2 carrots
  • 3 potatoes
  • 2 -3 cups cooked pumpkin
  • 2 Italian sausages
  • 3 boiling onions
  • 2 -4 garlic cloves
  • 32 ounces chicken stock
  • 4 cups water (optional)

Directions

    Chop up leeks, carrots, potatoes and sausage into 1 to 2 inch large chunks.cut up 1 - 4 cloves fo garlic in half, depending on how much you like garlic.

    Peel boiler onions.

    Put chicken stock in soup pot along with all the above ingredients.

    Then take chunks of the roasted pumpkin (about 2-3 cups worth) and put it in the pot.

    Add water if the stock does not cover all the ingredients.

    Turn burner on medium and cook until the potatoes are done.

    Serves well with croissants or garlic bread.
