Quick Garlic Shrimp

  • 1 lb. large shrimp
  • 2 to 3 cloves garlic, minced
  • 1 medium lemon
  • 2 stalks green onions
  • 1/2 c. chicken stock
  • 2 Tbsp. soy sauce
  • 2 Tbsp. rice vinegar or dry sherry
  • 4 1/2 tsp. cornstarch
  • 1 Tbsp. olive oil

    Shell and devein shrimp.

    Mix cornstarch, soy sauce, wine vinegar (or sherry) and chicken stock.

    Set aside.

    Heat olive oil in wok or large skillet.

    Add shrimp and juice of lemon.

    Stir-fry until shrimp turns pink.

    Do not overcook.

    Stir in onions.

    Add cornstarch mixture and cook until sauce just thickens.
