- 1 c. raisins
- 1 beaten egg
- 1 c. packed brown sugar
- 2 Tbsp. cooking oil
- 1 Tbsp. grated orange peel
- 2 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
Directions

1Combine raisins and 1 1/2 cups water. Bring to a boil.

2Remove from heat.

3Cool to room temperature.

4Stir in the egg, brown sugar, oil and orange peel. Stir together the flour, baking powder, salt and baking soda. Add to the raisin mixture, stirring just until blended.

5Pour into a greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Bake at 325° until done, about 1 hour.

6Remove from pan and cool.

7Makes 1 loaf.
