Raisin Brown Bread

  • 1 c. raisins
  • 1 beaten egg
  • 1 c. packed brown sugar
  • 2 Tbsp. cooking oil
  • 1 Tbsp. grated orange peel
  • 2 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. baking soda

Directions

    Combine raisins and 1 1/2 cups water. Bring to a boil.

    Remove from heat.

    Cool to room temperature.

    Stir in the egg, brown sugar, oil and orange peel. Stir together the flour, baking powder, salt and baking soda. Add to the raisin mixture, stirring just until blended.

    Pour into a greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan. Bake at 325° until done, about 1 hour.

    Remove from pan and cool.
