  • 1 (2 1/2 to 3 -pound) chicken, cut ito serving piece
  • 1/2 cup raspberry vinegar
  • 1/2 cup dry redwine
  • 1/4 cup soy sauce
  • 4 to 5 garlic cloves, finely chopped
  • 1 1/2 teaspoons dried, crushed rosemary leaves

    1. Place chicken, skin-side down, in ovenproof baking dish.

    2. Combine remaining ingredients and pour over chicken

    3. Bake in preheated oven until skin is brown and glazed and flesh is tender, about 1 1/2 hours, turning once every half hour.

    Serve with oven roasted potatoes or rice pilaf.
