Ingredients
- 2 (10 oz.) pkg. frozen raspberries
- 2 envelopes unflavored gelatin
- 3/4 c. cold water
- 2 Tbsp. sugar
- 1 Tbsp. lemon juice
- 1/4 tsp. almond extract
- 4 egg whites
- dash of salt
- 1/4 c. sugar
- 1 c. whipping cream, whipped
Directions

1Thaw berries (reserve some for garnish, wrap in foil and return to freezer).

2Soften gelatin in cold water.

3Combine raspberries, gelatin, 2 tablespoons sugar and lemon juice.

4Heat to dissolve gelatin.

5Add almond extract and cool this until consistency of egg whites.

6Beat egg whites and salt until soft peaks form.

7Gradually add 1/4 cup sugar until stiff.

8Whip cream; reserve 1/4 cup.

9Fold egg whites and whipped cream into raspberries.

10Pour into 1-quart souffle dish which may be extended with a wax paper collar.

11Refrigerate until serving time.

12Garnish with whipped cream and reserved berries.
