Ingredients

  • 1 kg red onion, sliced
  • 1 tablespoon oil
  • 200 g sugar
  • 250 ml red wine
  • 150 ml red wine vinegar (I used half and half) or 150 ml balsamic vinegar (I used half and half)
  • 1 teaspoon salt
  • 1 teaspoon fresh ground pepper

Directions

    Heat oil, add onions, salt and pepper and sugar.

    Cook gently for 1/2 hour until liquid is almost gone (quite a lot of liquid comes out at the beginning).

    Add wine and vinegar, simmer for 1/2 hour or until liquid is almost gone.

    Put into sterilised jars while still hot.
