- 1 can 16 Oz. Size Red Kidney Beans
- 2 Tablespoons Rendered Bacon Drippings
- 1 Tablespoon Flour
- 1/2 cups Diced Red Onion
- 1 whole Tomato, Chopped
- 2 cloves Garlic, Minced
- 1 Tablespoon Chopped Jalapeno Pepper, For Added Heat (optional)
- 1/2 teaspoons Coarse Salt, Or To Taste
- 1/8 teaspoons Freshly Ground Black Pepper
- 1/2 teaspoons Ground Cumin
Directions

1Drain the kidney beans. Mash them with a fork or potato masher and set aside.

2Heat the rendered bacon drippings in a heavy skillet and add the flour. Cook, stirring, until it begins to brown.

3Add the beans and the remaining ingredients to the skillet. Cook and stir for about 20 minutes or so until most of the moisture is absorbed into the beans.

4Serve garnished with shredded cheddar cheese, if desired. This makes 2 generous servings.
